Learn how to make Brinjal Onion Curry With chef Lakshmi only on Variety Vantalu. <br />Brinjal Onion Curry…Brinjal is our family’s favorite vegetable. There are many different ways in which we prepare them. But this is one of the best recipes. It has a sweetness of onions, tanginess of tamarind and soft whole brinjals which are super delicious with rice/ roti. <br /> <br />Ingredients: <br /> <br />Brinjal: 500 gm <br />5 tbsp Oil <br />1 tbsp Whole urad dal <br />1 tbsp Cumin seeds <br />6 -7 Dry Red Chillies <br />1 tbsp Tamarind <br />salt to taste <br />1/4 tsp Turmeric Powder <br /> <br />Method: <br /> <br />1. Add 2 tbsp oil in a pan and heat it. Once oil is nice and hot add Whole urad dal, <br /> Cumin seeds, Dry Red Chillies and roast it well. <br />2. Once tempering is cooled down, put it in the mixie jar and grind it. <br />3. In a mixie jar, add Turmeric powder, Tamarind, Salt to taste, onions and grind it <br /> into a smooth paste. <br />4. In a pan, add 3 tbsp oil, chopped brinjal and cook it well up to 10 minutes. <br />5. Add prepared masala mixture and mix it well. <br />6. Brinjal Onion Curry is ready now. Switch off the stove and <br /> take it to the serving bowl. <br /> <br /> Serve it with rice or dosa or Chapathi. <br /> Happy Cooking !!!
